The Hungry Gap


Every year, there are a few weeks across April, May, and sometimes early June, when the winter crops have shut up shop and the spring and summer vegetables are in flower, but still too young to produce anything edible — like the beautiful aubergine plant below!


This period is called the Hungry Gap.


If you haven’t heard of it, that is probably because the supermarkets insist on stocking every possible fruit and vegetable all year-round — no matter the season, no matter how they are grown, no matter the distance travelled. It keeps shelves stocked, but it doesn’t do much for flavour, or any good for our planet.

We do things differently at NONA, creating all of our menus using seasonal ingredients for the best flavours with the least environmental impact.


It means we have to be a little more creative this time of year, but we enjoy the challenge. It gives our chefs a chance to create unique new dishes that make the most of fresh spring flavours while leaning into cured, aged, or preserved ingredients like lardo di colonnata.


It’s a time for innovation, tradition, fresh thinking, and patience — and we wouldn’t have it any other way.

There one minute, gone the next


Asparagus, to us, sings springtime. It’s a sign that warm days and bright, fresh flavours are on their way. But it doesn’t stick around for long, so we are making the absolute most of it while it lasts.


You can find it on both our pizza and pasta this month — just the snap of green we need to brighten things up for the warmer months.
