March is here, and that means very delicious, very local, very green produce to get Spring started.


This month, one of our wonderful veggie farmers tells us what’s making him smile right now, we welcome a Belgian icon onto our seasonal pizza, and we’re hiring!

A chat with Dries — our vegetable man


Dries is one of our vegetable farmers and a man who truly lives and breathes the seasons. Here, he tell us what’s been flourishing on the farm, what needs a little help, and what’s been making him and the team at Le Monde des Mille Couleurs smile this month.


Q: What produce is really thriving this month, Dries?

A: We are still picking lots of topinambur (Jerusalem artichoke) and leeks outside — they are great seasonal vegetables this time of year.

Q: Have there been any challenges?

A: In the greenhouse, the spinach, chard, pak choi, and spring greens like rocket, mizuna, and mustard are growing slowly because of a lack of sunlight in the last few months. But we are working with a team of seven people to organise a nice crop plan for this year’s seasons and menus.



Q: What’s making you smile this month?

A: The rays of sun are making us happy, the moon looking down on us, the plants coming back to life after winter, the seeds that are germinating, the first trees and plants that are flowering, and the good energy my team are putting into our vegetables that will make them stronger than ever.

A Belgian icon


Endive, witloof, chicory — so many words for one modest Belgian icon. Grown organically in Brabant and the Région Bruxelloise, you really can’t get more local than this. And with their crispy leaves that soften and char to velvet perfection, we love them on top of this month’s Indivia Belga pizza.
