Hey there,


Finally! The sun has come out in Brussels and it feels like summer.


In this newsletter, we shift our attention from the bright greens of spring to the reds and deep purples that come with the warmer weather.


We loved our pizza menu so much in June that we have kept it the same for July, and at NONA Pasta, we’ve added four new dishes that we think you will love.

Our early summer loves


Not long ago, aubergines were just tiny purple flowers growing on a big green vine. But with the month of June, they have filled out nicely and we are so pleased to have them on our plates this July.


We love aubergine — or to use the Italian, melanzane — for their generous proportions and the richness they bring to fresher, lighter summer flavours.


To welcome it back, we created a brand new pizza — the Sarracino, which made its debut in June. Topped with fried rounds of aubergine, spicy salami, and pecorino on a tomato base, the name was chosen by our pizzaiolos and translates to beau gosse in Neapolitan.


You will also find it on our new Ortolana pasta, and we can’t talk about aubergine without a wink to our beloved Norma — a veggie pasta so delicious, it’s more popular than our meat options.

We love bell peppers in all their forms, but they really sing when they are roasted in the oven, low and slow. It brings out their natural sweetness and gives them a soft, fudgy texture that goes so well with the crispy, chewiness of our pizza dough.


This month, we have used it on our new pepperoni pasta dish, our FDWL pizza with fried aubergine and grated courgette, and on our Salsiccia e Verdure — a white-based pizza with fior de latte mozzarella, sausage meat, and scarmoza affumicata. It’s the perfect combination of salty, sweet, and smokey.

On your visits to our restaurants, you may have noticed our collections of postcards. These cards bring together our love of film photography with our passion for seasonal produce, our farmers and suppliers, and of course, Naples.


From this month, they will each have little notes written on the back telling a part of the NONA story. A special message from us to you with pictures beautiful enough to pin up on your fridge.
